Chef Leah Cohen of Pig and Khao on New York’s Lower East Side fell in love with the spicy, Thai noodle dish Khao Soi when she traveled throughout Southeast Asia a few years ago. She made the dish for Playboy senior editor Jeremy Repanich and questioned why he’d ever eat white meat chicken instead of the more flavorful and tender dark meat.
